Surprise by Mum
On friday, i woke up and found my Mum in the living room and she told me suddenly " i bought duck, i wan to eat duck!" I went "huh" and thought wan duck just go food court and buy roast duck. But than she said that wasn't what she wanted. My mum and dad went to Singapore Cricket Club like i dunno how many years ago, dun even know whether am i in this world yet.
The challenge..is Orange de Duck. Traditionally duck breast is used and goes together with an orange based sauce. So i thought a little and told mum ok, i'll do it. And create my version of it.
First i took the whole duck, and dissected it, removing the breasts , legs and all. Keeping the breast leaving the rest in the freezer. With the breasts, i seasoned it with salt, black pepper corn, olive oil and lots of orange peel ( orange de duck , in case u r wondering).
With little time, i search my fridge to see what i can use together for the dish. I have potatoes, tomatoes, asparagus, white prawns and red snapper. Great! decided to do something like a surf and turf, where food from sea and land mix.
With the stuff i had on hand, i planned the following main course:
Trinity of Orange de Duck, Butterflied White Prawn
and Red Snapper Accompanied by
Grilled Tomato, Asparagus and caramalised Tangerine.
Mashed Potatoes.
It was a nice family dinner, with my Dear coming to join us for the meal. Here is what looks like.
